Chewy New England Maple Cookies Recipe

The 3rd and last course of a traditional 3-course tea party consists of Desserts – my favorite! All I have to say about this recipe is… YUM! Click here to see other tea party recipes.

Chewy New England Maple Cookies

1-1/2 c. all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 c. butter
1 c. brown sugar, packed
1 egg
1/2 c. pure maple syrup
1/2 tsp vanilla extract
1 c. flaked coconut

Preheat oven to 375F. Lightly grease cookie sheets.

In medium bowl, combine flour, baking powder and salt; set aside.

In mixing bowl, cream butter and brown sugar until fluffy. Beat in egg, maple syrup and vanilla until well mixed. Stir in flour mixture until just mixed and then stir in coconut.

Drop mixture by tablespoonfuls 2″ apart onto prepared baking sheets. Bake for 10 to 12 minutes or until golden brown. Transfer to wire racks to cool. Store in airtight container.
